Puerto Rican mamey is the mammee apple (Mammea americana), a round Caribbean fruit with a rough brown rind and firm orange flesh. It is a different fruit from mamey sapote (Pouteria sapota).
Sweet, fragrant orange flesh, firm to juicy, often compared to apricot; the white membrane under the rind is bitter.
Peel it, scrape off the bitter white membrane, slice the flesh and discard the seeds. Eat it fresh or make dulce de mamey (mamey in syrup), preserves, ice cream or shakes.
