It has lean, mild-flavored meat, great stewed with sofrito and wine, roasted in the oven with herbs, or prepared as a traditional fricassee. Comes vacuum sealed in a 3 to 3.5 pound package, frozen. Thaw it in the refrigerator a day before cooking to keep its texture and juiciness when you prepare it.
