They have a mild, earthy flavor that comes alive when sauteed in butter or olive oil with a bit of garlic, great alongside meats, pasta, or folded into a good omelette. They're also tasty stuffed and baked, or added to a rice dish. Store them in the fridge in a paper bag so they can breathe, and use them within the first few days for the best texture.
