Sweet ají peppers (Capsicum chinense) come in a range of colors and are a flavor base of Puerto Rican cooking, used for sofrito, recaíto, mojito isleño, or other stew bases. A half pound equals about two cups, enough for several batches of sofrito. Unlike hot peppers, these don't carry any heat, so you can use them freely in any recipe without worrying about spice level.
