Russian kale has a sweet, non-bitter flavor, with edible leaves and purple stems you can cook right along with them. Cultivated in Puerto Rico, it's great sauteed with garlic and olive oil, tossed into soups and stews, or blended into a green smoothie with pineapple or banana to mellow out the flavor. It also holds up well baked in the oven until crisp, turning into homemade kale chips. Store it in the fridge wrapped in a damp paper towel inside a bag or container to keep it fresh for several days.
