Okra, also known as quimbombó or guingombó, is a vegetable widely used in stews and soups for the thick body it gives the broth, and comes in a 1 pound pack. It is the traditional base for quimbombó guisado with ham or pork, and also works well sauteed with garlic and onion as a side. To cut down its slippery texture, sear it over high heat for a few minutes before adding it to the stew. Keep it in the fridge and use it within the first few days so it stays firm and fresh.
