This Le Petit cheese is brie-like, with reduced lactose and a milder, delicate flavor, semi-firm texture, and an off-white rind. It's made with milk free of the r-BST hormone, from grassfed cows at Vaca Negra in Hatillo, Puerto Rico, in a 7-8oz container. Serve it at room temperature on a cheese board with crackers, crusty bread, or fruit like grapes and quince paste, or melted on toast with a drizzle of honey. Store it wrapped in wax or parchment paper in the fridge, and take it out about 20 minutes before serving so it develops its full flavor.
