Ginger is the rhizome of Zingiber officinale, a relative of turmeric and cardamom; it has been grown in Puerto Rico since the 16th century.
Aromatic, spicy and warm with citrusy notes; young ginger is juicier and milder.
Scrape off the skin with a spoon, then grate, mince or slice it for tea, juices, marinades, soups and stir-fries. Store unpeeled in a bag in the fridge for weeks, or freeze it and grate from frozen.
