Galangal is a rhizome from the ginger and turmeric family, widely used in Thai, Indonesian, and Malaysian cooking. It's harder and more fibrous than ginger, so it needs to be sliced instead of grated, and it's mainly used to flavor broths, curries, and soups like tom kha. Its flavor is sharper and more citrusy than ginger's. Store it in the fridge wrapped in a paper towel, or freeze it whole if you won't use it soon.
