Carrucho is the Puerto Rican name for queen conch (Aliger gigas), a large Caribbean sea snail whose meat is eaten as seafood.
Firm, slightly chewy pale meat with a mild, slightly sweet flavor; it turns tough if not tenderized.
Clean it, then tenderize it by pounding or simmering until tender. In Puerto Rico it is served as ensalada de carrucho (conch salad with lime, onion and peppers), in escabeche, stewed in creole sauce, or in turnovers and fritters.
