This Carnaroli rice comes from Italy and is the traditional variety used to make a creamy risotto, prized for grains that absorb liquid slowly while holding their bite. It's the traditional Martinotti family brand: in the post-WWI period, the Toro trademark was first printed on 100kg burlap bags using crude rotary printing presses, then loaded onto trucks and sold to neighboring areas. As production technology and marketing networks developed, Riso Toro moved into convenient 1kg cardboard packages and was gradually sold everywhere in Italy. Cook it slowly, stirring in broth a little at a time to release its starch, and store the 2.2 lb package in a cool, dry place.
